Ingredients You’ll Need

  • Pork ribs – 2 racks (have them cut/separated when purchasing them)
  • Soy sauce – 2 cups
  • Water – 1 cup
  • Chili pepper flakes – 1 tablespoon
  • Garlic – 1 head (smashed and peeled)
  • 3 cups of sugar
  • 2 tablespoons rice wine vinegar
  • 1 cup of hoisin sauce, divide it (half for your marinade and the other half for your final sauce)

  1. Preheat your oven. Set it to a 350 degree temperature. Place your rack in a huge roasting pan. Fill your pan with a little water.
  2. Remove your ribs from where it was marinated (note: save the marinade for later use). Tent your pan using a heavy duty foil and put it into your oven.
  3. The ribs should be steamed for about one hour. After that, gently take away the foil covering from the pan. The ribs should be brushed with lots of marinade. Cover again. Cooking should be continued for another one more hour. The process of basting should be repeated and then cook for thirty minutes more or until your meat is considerably tender. Remember, the lower the heat and the longer the cooking time is the secret for cooking your ribs tender and juicy.
  4. While your ribs are still cooking, whisk all together your remaining half cup hoisin sauce together with your vinegar (rice wine), as your final sauce.
  5. Remove the cooked ribs from your oven. It should be set on broil. Evenly brush your ribs many times with the sauce. It should be broiled until your sauce becomes caramelized. Make sure that don’t burn the caramelized sauce though. Now you’re done.
  6. Allow the ribs to rest for minutes before you serve and enjoy the delicious taste.

  • In preparing the meat, you need to marinate the ribs for 24 hours to have a tender and delicious result.
  • Rinse and pat dry the ribs. If cooking a whole slab, do remove the membrane from the back of the rib slab.
  • Next, place the ribs in a pan. Spread out your smashed garlic. Pour your marinade on the ribs, cover and refrigerate. (For marinade preparation, in a large bowl, pour in your right measurements of water, soy sauce, sugar, and half the hoisin sauce then whisk together. You may add the chili flakes.)
  • In the cooking process, you will be needing a roaster with a rack or a large doubled-deck steamer. If you will be using a roaster, you will then add water to the bottom and cover it with heavy duty aluminum foil. By doing this, you will allow your ribs to steam amazingly slowly.
